Spatchcocked Turkey · $85

Butterflied and laid flat on the post oak pit, so the whole bird smokes evenly: juicy white and dark meat with more crisp, smoky skin, and it carves fast. Served with raspberry chipotle sauce. Feeds 8–10 people.

How many people does the holiday menu feed?

A whole turkey breast feeds 5–7, a spatchcocked turkey feeds 8–10, and a whole brisket feeds 10–12. Each pan of sides feeds 8–10.

What is a spatchcocked turkey?

Spatchcocking means the backbone is removed and the turkey is opened up and laid flat. On our post oak pit that means the whole bird cooks evenly, so the breast stays juicy while the thighs finish, and more of the skin is exposed to the smoke for crisp, smoky skin in every serving. It also carves faster at home.

Which holiday turkey should I order?

The whole turkey breast is all white meat and feeds 5–7. The spatchcocked turkey is the whole bird, white and dark meat, and feeds 8–10. Both are post oak-smoked, come hot off the pit, and are served with raspberry chipotle sauce.

Do the holiday meals come hot or cold?

The smoked turkey and brisket come hot off the pit. Sides come cold in 9×13 aluminum pans with reheating instructions, so you can heat them when you’re ready.

When should I pick up my holiday order?

Wolf Pack is closed on Thanksgiving Day (Thursday, November 26), Christmas Eve, and Christmas Day, so plan to pick up before the holiday. Wednesday, November 25 is the last day to pick up before Thanksgiving, and Wednesday, December 23 is the last day before Christmas. We confirm your pickup time when you place your order.
